- Beat the egg yolks with sugar and tapioca starch, then sift the mixture to remove any lumps. Note: Make sure no bubbles form.

- Sift the mixture twice. Pour the sifted mixture into each flan mold (about ⅔ full), then steam at 160°C for 40 minutes.
- After the flan is cooked, remove it from the steamer and let it cool. Cover and store in the refrigerator.
